Cuna de Piedra Estate Cabernet Sauvignon
The grapes grow on pebbly soil that reaches, in conjunction with the climate, perfect ripeness. From plots 6, 7, and 14, planted in 1994, 1997, and 1993, with an annual production of 6,000 kg/ha.
A wine of intense ruby red color. Spicy aromas with notes of pepper, red fruits such as strawberries, blueberries, and a touch of liquorice. What is perceived in the mouth is identical, with powerful but ripe tannins, complex and naturally fresh.
Winemaking:
Traditional, hand-harvested. Selection of clusters, destemming, fermentation at temperatures not exceeding 25°C, with selected yeasts until reaching minimum residual sugar. Then, and in a natural way, malolactic fermentation is completed. The wine continues its aging in Italian tulips where its maturation is accelerated. It is then stabilized, gently filtered, and bottled. It remains maturing in the bottle for 6 months.
Food Pairing Suggestions:
Roasted red meats, stuffed pasta with strong sauces, and dark chocolate.
