Cuna de Piedra Tannat
Between sandy and clay soils with abundant gravel from our Finca Los Cerros, with great care for each plant, we work with this emblematic grape variety representative of our country. it is the pure varietal expression, with striking colors and nuances, aromas of red and black fruits, and spices; with good concentration and persistence.
Winemaking:
Traditional, hand-harvested in late March. Selection of clusters, destemming, fermentation at temperatures not exceeding 25°C, with selected yeasts until reaching minimum residual sugar. Then, and in a natural way, we complete the malolactic fermentation. 30% of this wine is aged for 9 months in barrels, generating complexity and longevity. The blend is completed with 70% of the wine crafted in concrete tulips and Cocciopesto amphorae. Stabilization, bottling, and 6 months of bottle aging.
Food Pairing Suggestions:
Hard cheeses, roasted red meats, stuffed pasta with strong sauces, and dark chocolate.
