Lahusen Pinot Noir
Grapes from our vineyard, sandy-loam, calcareous, and with an abundant amount
of gravel formed from the degradation of the bedrock of Los Cerros de San Juan.
It is a variety originally from French Burgundy.
Although it is one of the most elegant wines in the world, its thin skin and small
amount of phenolic compounds make this a wine of very light color, with aromas of
red fruits, cherries, strawberries, infusions, and a delicate oak note. In the mouth, it
presents a very soft and delicate texture, fruity, and of great persistence.
Winemaking:
Traditional, hand-harvested in late February; we select the clusters, 70% of the
grapes are destemmed, and the remaining 30% are incorporated with whole
clusters.
Alcoholic fermentation at temperatures not exceeding 22°C, induced with selected
yeasts until reaching minimum residual sugar, in our modern amphorae brought
especially from Italy for this operation (fermentation with micro-oxygenation),
allowing for the acceleration of the maturation of the wine treated there. Extreme
care to avoid oxidation and partial malolactic fermentation. Stabilized and bottled.
Food Pairing Suggestions:
Hard cheeses, roasted red meats, stuffed pasta with strong sauces, and dark chocolate.
