Cuna de Piedra Cabernet Sauvignon
Between sandy-loam and clay soils with an abundant amount of calcium carbonate from our Finca Los Cerros, with intense work on each plant, we seek excellence in this, the star red grape of the world. Intense ruby red colors. Spicy aromas of pepper, red fruits such as strawberries, blueberries, and a touch of liquorice. With present but integrated tannins, complex, with pleasant smoky notes of cedar.
Winemaking:
Traditional, hand-harvested in late March. Selection of clusters, destemming, fermentation at temperatures not exceeding 25°C, with selected yeasts until reaching minimum residual sugar. Then, and in a natural way, we complete the malolactic fermentation. 30% of this wine is aged for 9 months in barrels, generating complexity and longevity. We then proceed to create the blend with 70% of the wine crafted in concrete tulips and Cocciopesto amphorae. Stabilization, bottling, and 6 months of bottle aging.

Fatty and sharp cheeses, grilled red meats, and pasta with strong sauces.
